O&S Presenting Seersucker at the Seeing Red Wine Festival

For the 26th year in a row the quaint, pastel-colored, beachside town of Seaside, Florida will be hosting the Seeing Red Wine Festival in picturesque downtown November 3 - 6. If you know anything about Seaside, you know this charming town is well worth the trip to momentarily escape reality and instead delight your tastebuds and your sense of adventure at this critically acclaimed event.

We were fortunate enough to take the trip down there last year for the 25th annual Seeing Red Wine Festival, and we're just as thrilled to be back this year for the festival's 26th celebration. O&S's Seersucker Candy Co. line will be providing boozy Salted Bourbon Caramel Truffles for the Al Fresco Reserve Tasting on Friday night, an event featuring highly allocated and reserve wines as well as delicious bites and appetizers while accompanied by live music. Tickets to this special event are going quickly - so grab yours here!

As a way to show what we--a bunch of chocolatiers--can do with wine at this wine festival, Seersucker will be presenting a variety of treats at the Grand Tasting on Saturday as well. Our favored rosé gummy bears, on this occasion made with the fitting 30A Rosé, are sure to be a hit for wine-lovers and candy-lovers alike, and a few of our chocolate confections will ensure everyone gets their cocoa fix. 

The Seeing Red Festival is always a fun and delicious event -- one that supports underprivileged children in the Northern Florida area -- and the chefs, artisans and winemakers there are second to none.

O&S Involved in Southern Living's 50th Anniversary

Nashville has been able to put a lot of trophies on its shelf over the past few years, with so many travel magazines and websites proclaiming it "The Hottest City in the US" or a "Must-Visit Destination."

But by far the the biggest and shiniest trophy Music City has earned comes from the fine folks at Southern Living magazine. This famed publication chose little ol' Nashville as the destination of its 50th birthday party, and we are over-the-moon excited to be involved in the celebration.

The weekend is filled with tons of events showcasing the best that Nashville has to offer: from a dinner under the stars at the beautiful Cheekwood Botanical Garden, to a songwriters In-The-Round night at The BlueBird Café, to a "Sweets & Spirits" Tasting at Olive & Sinclair Chocolate factory (!!!) there will be an event to spark the eye of everyone. 

Sadly, our "Sweets & Spirits" tour on Saturday September 3rd has already sold out, but if you want to go and take the tour yourself, we 100% approve. We'll still be open with our normal tour schedule so we know you could make it happen!

Here's the deal: dessert expert extraordinaire Pam Lolley from Southern Living magazine will be leading a tour of Nashville's best treats, including sweets from us at O&S, as well as the famous Goo Goo Cluster shop and Christie Cookies factory. Guests will also enjoy tours and sips from Nelson's Green Brier Distillery and Corsair Distillery.

O&S at Music City Food + Wine

Although we enjoyed a far-too-brief bout of dry and cool(er) weather here in Nashville, we at Olive & Sinclair know that we can't count on two measly days of beauty to usher in the chill of Fall. No, we typically mark the onslaught of Autumn by one special event: Music City Food + Wine. A festival that always takes place around the middle of September, we look forward to it for all of the fun we have and for the *hope* that Fall will soon follow. 

And while the weather in Nashville won't necessarily be cool by September 18 and 19 (a chocolatier can dream, can't he?), eating and drinking to your heart's content is pretty cool. And really, really delicious.

Along with some of Nashville's most notable chefs and popular restaurants, Olive & Sinclair Chocolate Co. and Seersucker Candy Co. will be at The Grand Taste on both Saturday and Sunday to give you a little something sweet. And all of these folks will be there with us.

When did you join the O&S Family?
I joined Olive and Sinclair January 2012.

What brought you to O&S?
Scott and I have known each other for 18 years.  We met at MTSU. I was working on a Masters in Sociology of Religion at the time. However, the magnetic pull of Restaurant Kitchen work was too much to resist. When Scott contacted me in 2011 to offer me a job, I tried to dissuade him. As we know that is very difficult and here I am.

What do you do at O&S?
I manage the staff, production, give tours, push paper, and whatever else is asked of me.

What do you like best about working at O&S? 
Scott has said, on more than one occasion, that we work with him not for him. What I prefer best about working here is the overall sense of family that pervades our small staff. This sense of camaraderie has created a great non-corporate culture.

What is your favorite O&S treat and why?
When it comes to my favorite treats, I enjoy our Mexican Cinnamon Chili Bar, Salt and Vinegar Caramels, 75% dark chocolate bar, Smoked Nib Brittle. Who the hell am I kidding, I eat all of it.

O&S Makes Country Music's Biggest Night...Sweet!

Last night was one of the biggest and and most exciting celebrations of the year for country music: the CMT Music Awards. Traffic in downtown Nashville came to a near stand-still as celebrities and fans flooded the area, folks at home were glued to their TVs as they soaked up the action, and everyone inside the Bridgestone Arena got their fill of country music and Southern Artisan chocolate.

Well, maybe not everyone.

Its no secret that the artists, performers, and presenters at these types of awards ceremonies receive certain benefits for doing what they do, but we were thrilled and honored to be considered a worthy gift for some of country's biggest stars. Alongside locally-made jewelry, body products, electronics, textiles and even more goodies, Olive & Sinclair's Bourbon Nib Brittle made the cut and went home in the hands of every person who performed.

The South is home to some pretty incredible food. And Southern Living knows it. These folks are the authority on all things tasty, and they've done their fare share of traveling around the South and tasting everything it's got to offer. From spicy jellies, to hoppy beers, to crazy-expensive (and presumably crazy-delicious) honey, the editors over at SL have curated a list of what they believe to be the BEST of the best Southern artisan-crafted foods: the 2016 Food Awards.

That's why we were so blown away to be included in their list! Admittedly, our Smoked Nib Brittle is like the ultimate Southern sweet treat, what with the smoke of the infamous Benton's smokehouse, but we like to think it's all of the time, hard work, and love we add in that really caught Southern Living's eye...or tastebuds.

O&S at Nashville Wine & Food Festival

When the weather begins to warm, it's no wonder that Nashvillians are hungry to get outside and do something fun. What better way to feed that hunger than with local tastemakers and wines from across the globe? 

The third annual Nashville Wine & Food Festival not only showcases local food-makers and world-class wineries, but it's a fun way to bring the community together and try something new. This year's festival boasts over 50 wineries, 20 local restaurants, 10 breweries, and an artisinal market featuring local producers--like us!--which means there is truly something for everyone at this event. Chocolate, after all, is for everyone :D 

The festival takes place May 21 from 12 pm - 4 pm at Nashville's historic Bicentennial Mall.

Our Chocuterie is No Joke.

Chocuterie. No, not charcuterie, like dry-cured meat, CHOC-uterie, as in, chocolate sausage. Are you hearing us now? This is not a drill. Our Chocuterie is no joke.

We put a lot of time and elbow grease into the products that we create here at Olive & Sinclair each and every day, but our Chocuterie is in a league of it’s own. Not only do the flavor profiles in our chocolate sausage links change from season to season, but we also make a new batch just about every single week--and even more than that when the season strikes Christmas--which means that the link you get is always fresh, full of flavor, and packed with our love.

This Spring, we’re rolling out one of our all-time favorite flavors, Blackberry Brown Butter Brioche. To make it, we add toasty pieces of brioche lodged throughout a O&S chocolate ganache to mimic the nodules of fat that one would find in a salty pork saucisson. Mixing in fresh, luscious blackberries brings in bright, fruity flavor. We also blend in toasty brown butter to help thicken the ganache, allowing it to better hold its form while also bringing rich, nutty flavors. Once fully blended, we form the mixture into logs, give it a thin dusting of powdered sugar and tie it up in a fabric net. Voila!

To complete the look we wrap it all up in kraft butcher paper and seal it with a kiss...or well, a label.

There’s really no other meat-less but meat-inspired treat out there like it! Our O&S Chocuterie makes a lovely addition to any fancy-pants cheese plate, but it also goes pretty well with just a pair of fingers and a napkin!

Long gone are those hollowed-out, sugary-sweet, gold-foil wrapped bunnies of yesteryear that promised only disappointment and cavities to those sweet-teeth that dove in. Just like our chocolate bars, truffles and other sweet treats, our cute Easter hares are made bean-to-bunny, meaning they’re the real deal. These solid bunnies come in 67% cocoa, 75% cocoa and our buttermilk white, so everybunny is sure to find one that suits 'em. Best of all, they’re finished with a light coating of pastel-colored cocoa butter, which will make your Easter basket (or centerpiece!) the envy of every other.

O&S Featured in Southern Living's 50th Anniversary Issue

It’s been nine years since we began producing bean-to-bar chocolates, rich caramels, and beautiful barks to sell to the people of Nashville. Our machinery isn’t quite as shiny as it was back in 2007, but one thing that will never lose it’s luster is receiving praise and accolades from the likes of Southern Living magazine.

We feel prouder than ever to be featured in Southern Living's 50th Anniversary issue as one of the “50 Best Places in the South Now.”  Alongside fellow Tennessee greats like the Ascend Amphitheater and STIR restaurant and bar in Chattanooga, we at O&S are psyched to be in such great Southern company.

"34. Nashville Is Raising Chocolate to an Art Form - Many a chocolate lover has discovered Olive & Sinclair's factory and retail store in East Nashville. Last year, the company opened another shop in nearby Franklin. founder Scott Witherow and his crew mix stone-ground chocolate with pure cane brown sugar to create Southern Artisan Chocolate. They've made Southern sweets like Duck Fat Caramel and launched a new line, Seersucker Southern Craft Confections.

Nuit Belge Is Coming...and Going!!



It was less than one year ago that the inaugural Nuit Belge premiered at Nashville’s Marathon Music Works for a thirsty crowd of 500 folks. The evening was filled with fine Belgian beers, curated local bites, and plenty of good, wholesome fun. And just two-days shy of one year later, they’re at it again. And so are we.

Unlike last year, in which the festival was contained to just 500 people here in Music City, this year Nuit Belge is going on a tour of the South, peppering four of our region's greatest cities with Belgian delights: Atlanta (1/23), New Orleans (2/26), Nashville (3/12) and Charleston (4/16).

We were thrilled and honored to be a part of the festivities in the inaugural year, and we feel just as sweet about being included for the 2nd annual event! Because, chocolate screams Belgium, you know? (Yes, even when it's made here in Tennessee) Best of all, we’ll be traveling with the festival to each of the cities, eager to share our confectionary delights.

Caught in a haze of bright red raspberry powder as he was putting the finishing touches on our Seersucker Cherry Bomb Pickled Cherry Cordials, we caught up with production manager and chocolate-maker Jason to ask him about the event and what makes this matrimony of O&S and Belgian beer so great.

  1. The food is delicious. “Last year,” Jason says, “the food was incredible. Sometimes I feel like the food at these types of events can be lackluster, but we ate some killer stuff.”

  2. So are the chocolates. We’re bringing the full lineup from Seersucker Southern Confections: Cherry Bombs, Muzzle Loaders, and the Originals.

  3. The beer is plentiful. “I don’t really remember one standout beer from the previous festival,” Jason says. . . probably because there were so many good ones!

  4. Cool cities. If you’re tired of boring ol’ Nashville, the good news is that three other exciting cities are playing host to Nuit Belge as well. It’s a great excuse to take a trip.

  5. Chocolate + Beer = Love & Happiness. “Aside from the obvious--being that both chocolate and beer have lots of culinary prowess in Belgium--the two might make for such a good match because of both products’ necessitation for fermentation. Then again, that might not be true. What I know is true however, is that Ben Franklin once said, Beer is proof that God loves us and wants us to be happy. And the same can be said about chocolate; they’re both delicious!”

We're heading back down to Seaside Florida for the 25th Annual Seeing Red Wine Festival November 5-8.

Here in Nashville, we all love to escape down to Seaside for our beach getaways and we've been going down there each year for one of our FAVORITE festivals! If you've never been, we promise it is well worth the trip. 

On Friday, Nov. 6, the Al Fresco Reserve Tasting, from 6 to 8 p.m., is an elegant evening showcasing an incredible selection of library wines, featuring vintages that have been cellared to be uncorked at just the right time. Celebrated local chef, Jim Shirley, will prepare a delicious array of hors d’oeuvres that pair perfectly with the featured wines. The evening is complemented by live jazz music under a clear-topped tent and twinkling lights on Seaside’s Lyceum Lawn. Admission is $200 and a limited number of reservations are available.

The Grand Tasting, from 1 to 4 p.m., on Saturday, Nov. 7, is the main event and features more than 250 wines for tasting. Guests will spend the afternoon strolling through in SEASIDE®’s Central Square sipping an extensive array of highly sought after wines from around the world, while enjoying live music, light bites from South Walton’s leading local restaurants, and the opportunity to purchase wine on-site. General admission is $150 and VIP tickets are $300 and include early admission at 11:30 a.m. as well as access to the VIP tent with a private tasting of rare and premium wines.

On Sunday, Nov. 8, the weekend wraps up with a Celebration of Bubbles, from 10 a.m. – 1 p.m. at Great Southern Café in SEASIDE®

Bark is Back!

An annual favorite, our Peppermint Bark is back! 

A true labor of love, we make it entirely by hand with all natural ingredients. We even make the peppermint candy, color it with natural vegetable dyes and pull it by hand to create the perfect 'crunch' for our bark. 

It's sprinkled on layers of our dark and buttermilk white chocolate before it all gets broken into pieces and packed up in a newly-designed package.

Just a reminder for all you Nashville folks-limited tickets are still available for Nuit Belge tomorrow night! The event is March 14th, 2015 at Marathon Music Works and will feature Belgian beers and Nashville’s finest cuisine, including O&S chocolates! This event will be limited to only 500 guests, and will offer a very unique opportunity to sample Belgian beers paired with small plates from fourteen of Nashville’s top restaurants. All guests will receive a Spiegelau tulip glass upon entry to be used for tastings, as well as a festival guide, which provides details on food and beer being served. For the fifth year, Garden & Gun Magazine has announced their Made In The South Awards. Olive & Sinclair was honored to receive the honor of the top prize in the food category for our Duck Fat Caramels!

Scott Witherow has been a duck hunter all his life. He’s also a confectioner—the talent behind Olive and Sinclair, one of the South’s most successful up-and-coming candy shops. He made his name with creative chocolates that incorporate such regional standbys as buttermilk, bacon, and bourbon. Witherow’s latest creation, dreamed up in a duck blind, is yet another exploration of Southern flavor that combines two lifelong pursuits. “Using duck fat instead of butter brings a unique richness to caramel,” he says. “It’s like the difference between frying potatoes in butter and frying them in duck fat.” But that doesn’t mean these caramels taste like part of a hunt camp dinner. The fat is a subtle presence, a counterbalance to a healthy amount of cane sugar, alongside traces of salt, pepper, chile, and thyme. “You wouldn’t want the caramels to be overly savory,” Witherow says. “Balance is important.” Not only do the caramels pay tribute to the sporting life, but the box they arrive in also tells a story: Decades ago, the company responsible for Witherow’s packaging manufactured boxes for a now-defunct shotgun shell company. It agreed to let the confectioner adapt the design to suit his purposes—as with the caramels, bringing a little bit of his own flair to a classic.
